Recipe: Cashew & Vegetable Stir-Fry

Summary: Makes 4 cups Asparagus and Cashew Chicken Stir-fry 500

Ingredients

  • 1 large red or white onion, sliced
  • 1-2 tsp. olive oil or coconut oil
  • 1 large carrot, sliced diagonally
  • 1 cup broccoli florets, chopped
  • 1 red pepper, diced
  • 1 cup bok choy or Chinese cabbage, chopped
  • 1 cup snow pea pods 1/4 cup cashew nuts

Instructions

  1. In preheated hot wok or skillet, cook the onion in oil over medium high heat for 3 minutes or until beginning to brown. Cook carrot for 1 minute;
  2. Add the broccoli and cook for another 30 seconds;
  3. Add the red pepper, bok choy and snow peas, cooking just long enough to heat through. Add the stir fry sauce (recipe on this site) and heat through.
  4. Sprinkle with cashews and serve over rice
