Recipe: Cashew & Vegetable Stir-Fry
Summary: Makes 4 cups
Ingredients
- 1 large red or white onion, sliced
- 1-2 tsp. olive oil or coconut oil
- 1 large carrot, sliced diagonally
- 1 cup broccoli florets, chopped
- 1 red pepper, diced
- 1 cup bok choy or Chinese cabbage, chopped
- 1 cup snow pea pods 1/4 cup cashew nuts
Instructions
- In preheated hot wok or skillet, cook the onion in oil over medium high heat for 3 minutes or until beginning to brown. Cook carrot for 1 minute;
- Add the broccoli and cook for another 30 seconds;
- Add the red pepper, bok choy and snow peas, cooking just long enough to heat through. Add the stir fry sauce (recipe on this site) and heat through.
- Sprinkle with cashews and serve over rice
